Barbecue Beef Ribeye with Garlic Mashed Potatoes and Roasted Asparagus
Tips for Experienced Cooks
Ensure your beef ribeye is at room temperature before searing; this helps achieve a better crust and more even cooking. Use a meat thermometer to precisely gauge doneness; medium-rare is perfect at 130-135°F. Enhance the depth of the garlic flavor by sautéing the minced garlic in butter before mashing it with the potatoes. Try adding a splash of heavy cream to the mashed potatoes for extra richness. If you have a convection oven, use it to roast the asparagus faster and more evenly.
Step 1: Prepare the Beef Ribeye
Preheat the oven to 425°F. Pat the beef ribeye steak dry with paper towels and season generously with 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.
- 2 pounds beef ribeye steak
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Step 2: Make the Garlic Mashed Potatoes
Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to medium-low and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes and return them to the pot. Add the butter, milk, sour cream, 4 cloves of minced garlic, and remaining 1 teaspoon of salt. Mash until smooth and creamy.
- 2 pounds russet potatoes, peeled and cubed
- 1 cup unsalted butter
- 1 cup whole milk
- 1/2 cup sour cream
- 4 cloves garlic, minced
- 1 teaspoon kosher salt
Step 3: Roast the Asparagus
Toss the trimmed asparagus with the 2 tablespoons of olive oil, remaining 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Arrange the asparagus in a single layer on a baking sheet. Roast in the preheated oven for 10-12 minutes, until tender.
- 1 pound asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Step 4: Sear the Beef Ribeye
Heat a large cast-iron or oven-safe skillet over high heat. Add the seasoned beef ribeye and sear for 2-3 minutes per side until a nice brown crust forms. Transfer the skillet to the preheated oven and roast for 10-15 minutes for medium-rare doneness.

Step 5: Finish the Barbecue Beef Ribeye
Remove the ribeye from the oven and let rest for 5-10 minutes. Slice the ribeye into 1/2-inch thick slices. Drizzle the barbecue sauce over the sliced beef.
- 1/4 cup barbecue sauce
Step 6: Serve
Serve the barbecue beef ribeye with the garlic mashed potatoes and roasted asparagus. Garnish with the chopped fresh parsley.
