Grilled Hawaiian Teriyaki Beef with Pineapple and Garlic Fried Rice

For an intense flavor boost and to elevate this dish to restaurant quality, consider marinating the beef overnight. The longer marination time allows for deep penetration of flavors. Additionally, experiment with the addition of a dash of sesame oil and a sprinkle of sesame seeds to the marinade for a nutty flavor. For the green onions, lightly char some of them on the grill before adding to the rice for an additional layer of smoky flavor.
Step 1: Prepare the Marinade
In a bowl, whisk together the following ingredients:
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic (minced)
- 1 tablespoon grated ginger
Pour the marinade over the beef, cover, and refrigerate for at least 1 hour.
Step 2: Grill the Beef and Pineapple
Preheat the grill to medium-high heat. Grill the marinated beef strips and pineapple slices for 3-4 minutes on each side until they develop a caramelized crust.
Step 3: Scramble the Eggs
In a large skillet, heat 1 tablespoon of oil over medium heat. Add the beaten eggs and scramble until cooked through. Remove the eggs from the skillet and set aside.
Step 4: Sauté the Vegetables
In the same skillet, add the remaining 1 tablespoon of oil and sauté the green onions until fragrant.
Step 5: Prepare the Garlic Fried Rice
Add the cooked rice and diced pineapple to the skillet with the green onions. Stir to combine and season with salt and pepper. Stir in the cooked eggs and continue to cook for another 2-3 minutes, allowing the rice to develop a slight crisp on the bottom.
Step 6: Serve
Serve the grilled teriyaki beef with pineapple slices alongside the garlic fried rice. Garnish with extra green onions, if desired.
