Greek Beef Souvlaki Skewers with Lemon Rice Pilaf and Tzatziki-Dressed Salad
Tips for Experienced Cooks
Consider using a meat thermometer to ensure your beef reaches the perfect internal temperature of around 135°F (57°C) for medium-rare. If you're feeling adventurous, you can make your own Greek yogurt for the Tzatziki; it provides a deeper flavor. Also, try adding a small amount of fresh dill to the Tzatziki for an authentic touch.
Step 1: Marinate the Beef
In a large bowl, combine the beef, olive oil, lemon juice, garlic, oregano, salt, and pepper. Cover and refrigerate for at least 30 minutes.
- 1.5 pounds beef sirloin, cubed
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Step 2: Prepare the Tzatziki Dressing
In a medium bowl, grate the cucumber and squeeze out any excess liquid. Stir in the Greek yogurt, lemon juice, salt, and pepper.
- 1 cucumber, grated
- 1 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Step 3: Make the Lemon Rice Pilaf
In a medium saucepan, bring the water and lemon juice to a boil. Add the rice, cover, and simmer for 15-20 minutes until the rice is tender. Fluff with a fork and set aside.
- 1.5 cups long-grain white rice
- 3 cups water
- 2 tablespoons lemon juice
Step 4: Assemble the Salad
In a large bowl, combine the chopped romaine, sliced red onion, and chopped tomatoes. Drizzle the Tzatziki dressing over the salad and toss to coat.
- 1 head romaine lettuce, chopped
- 1 red onion, thinly sliced
- 2 Roma tomatoes, chopped
- Tzatziki dressing from step 2
Step 5: Grill the Beef Skewers
Thread the marinated beef cubes onto metal or wooden skewers. Grill the skewers over medium-high heat for 8-10 minutes, turning occasionally, until the beef is cooked through.
