Turkey and Spinach Meatloaf with Sweet Potato Wedges and Steamed Broccoli
Tips for Experienced Cooks
Consider using a combination of ground turkey and ground beef for more flavor and a juicier meatloaf. Adding finely chopped onions or garlic can also elevate the taste. You can top the meatloaf with a mix of ketchup and brown sugar for a caramelized glaze.
Step 1: Preheat oven and prepare ingredients
Preheat the oven to 375°F. Line a baking sheet with parchment paper for the sweet potato wedges.
- 1 large sweet potato, cut into wedges
Step 2: Make the meatloaf
In a large bowl, combine the ground turkey, panko breadcrumbs, Parmesan cheese, chopped spinach, Worcestershire sauce, ketchup, basil, oregano, salt, and pepper. Mix well until fully incorporated.
- 1.5 pounds ground turkey
- 1 cup panko breadcrumbs
- 0.5 cup grated Parmesan cheese
- 4 cups fresh spinach, chopped
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Step 3: Bake the meatloaf
Transfer the meatloaf mixture to a baking dish and shape it into a loaf. Bake for 45-55 minutes, or until the internal temperature reaches 165°F.
Step 4: Roast the sweet potato wedges
While the meatloaf is baking, toss the sweet potato wedges with a drizzle of olive oil and season with salt. Spread the wedges on the prepared baking sheet and roast for 25-30 minutes, flipping halfway, until tender and golden brown.
- Sweet potato wedges from step 1
- 1-2 tablespoons olive oil
- Salt to taste
Step 5: Steam the broccoli
During the last 10 minutes of the meatloaf and sweet potato cooking time, steam the broccoli florets until tender.

Step 6: Serve
Slice the meatloaf and serve it with the roasted sweet potato wedges and steamed broccoli.
