Grilled Huli Huli Chicken with Pineapple Fried Rice and Steamed Broccoli

Tips for Experienced Cooks

Consider basting the chicken with some of the marinade during grilling for extra flavor. If you have access to a charcoal grill, use it to impart a smoky flavor to the chicken. For a gourmet touch, create a pineapple salsa with diced pineapple, red onion, cilantro, lime juice, and a pinch of salt to serve on the side. You can also toast the jasmine rice before cooking to add a nutty flavor.

Step 1: Prepare the Huli Huli Marinade

In a large bowl, combine the soy sauce, brown sugar, rice vinegar, ginger, and red pepper flakes. Add the chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes, up to 2 hours.

  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 4 pounds boneless, skinless chicken thighs

Step 2: Cook the Pineapple Fried Rice

In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the diced onion and garlic and cook for 2-3 minutes until fragrant. Add the chopped pineapple and cook for an additional 2-3 minutes. Push the pineapple mixture to the side of the pan, then add the remaining 1 tablespoon of oil and the cooked jasmine rice. Stir to combine and cook for 5-7 minutes, stirring occasionally, until the rice is heated through and slightly crispy.

  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 1 fresh pineapple, peeled, cored, and chopped
  • 2 cups cooked jasmine rice

Step 3: Grill the Huli Huli Chicken

Preheat grill to medium-high heat. Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken for 5-7 minutes per side, or until fully cooked through.

Step 4: Steam the Broccoli

In a steamer basket, steam the broccoli florets for 5-7 minutes until tender.

Step 5: Serve
