Tips for Experienced Cooks

Experiment with grilling the tilapia instead of pan-frying for a smoky flavor. You can also create a more complex salsa by adding diced mango or pineapple. Consider making a homemade chili powder blend with various dried chilies for an extra layer of flavor.

Step 1: Prepare the Tilapia

In a shallow dish, zest and juice one orange and one lime. Add chili powder, cumin, garlic powder, salt, and pepper. Place tilapia fillets in the marinade, ensuring they are well coated. Let marinate for 15-20 minutes.

  • 1 whole orange (zest and juice)
  • 1 whole lime (zest and juice)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 fillets tilapia

Step 2: Cook the Rice

Rinse the rice until the water runs clear. In a medium saucepan, combine rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Fluff with a fork.

  • 1 cup long-grain rice

Step 3: Prepare Cilantro Lime Rice

Stir in the juice of the remaining lime and half of the chopped cilantro into the cooked rice. Set aside.

  • 1 whole lime (juice)
  • 0.5 bunch cilantro (chopped)
  • Cooked Rice from Step 2

Step 4: Make Black Bean Salsa

In a medium bowl, combine the rinsed and drained black beans, diced red onion, minced jalapeño (if using), diced avocado, the juice of the remaining orange, and the remaining chopped cilantro. Gently toss to combine.

  • 1 (15-ounce) can black beans (rinsed and drained)
  • 1 medium red onion (diced)
  • 1 whole jalapeño (minced, optional)
  • 1 avocado (diced)
  • 1 whole orange (juice)
  • 0.5 bunch cilantro (chopped)

Step 5: Cook the Tilapia

Heat olive oil in a large skillet over medium heat. Carefully place the marinated tilapia fillets in the skillet and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.

  • 2 tablespoons olive oil
  • Marinated tilapia fillets from Step 1

Step 6: Assemble and Serve

Serve the cooked tilapia over a bed of cilantro lime rice, topped with the black bean salsa. Garnish with extra cilantro and lime wedges, if desired.

  • Cooked tilapia from Step 5
  • Cilantro lime rice from Step 3
  • Black bean salsa from Step 4
  • Lime wedges (optional)
  • Cilantro (optional)
