Tips for Experienced Cooks

Step 1: Cook the quinoa

Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover and simmer for 15-20 minutes until quinoa is tender. Fluff with a fork and set aside.

Step 2: Roast the Brussels sprouts

Preheat the oven to 400°F. Toss the trimmed and halved Brussels sprouts with 2 tablespoons olive oil, salt and pepper on a baking sheet. Roast for 20-25 minutes, until tender and browned.

Step 3: Cook the beef masala

Add the minced garlic and grated ginger and cook for 1 minute until fragrant. Add the ground beef and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes. Stir in the garam masala, cumin, coriander, turmeric, cayenne and salt. Cook for 2-3 minutes.

Step 4: Finish the dish

Stir the lemon zest, lemon juice and Greek yogurt into the beef mixture. Serve the spiced beef masala over the cooked quinoa and top with the roasted Brussels sprouts. Garnish with chopped fresh cilantro.
