Sesame-Ginger Tofu Stir-Fry with Cauliflower Rice

To elevate the flavors, consider infusing the sesame oil with additional aromatics such as lemongrass or kaffir lime leaves before adding it to the tofu. Experiment with the sauce by adding a dash of fish sauce or oyster sauce for more depth. Finish the dish with freshly squeezed lime juice to add brightness.
Step 1: Press and marinate the tofu
Press the tofu to remove excess moisture, then cube it and marinate in soy sauce for 30 minutes.

Step 2: Cook the marinated tofu
In a large skillet, heat sesame oil over medium-high heat. Add the marinated tofu and cook until browned on all sides. Remove from skillet and set aside.

Step 3: Sauté the vegetables
In the same skillet, add vegetable oil and sauté garlic and ginger until fragrant. Add the sliced bell pepper, snow peas, and julienned carrot. Stir-fry until the vegetables are tender-crisp.

Step 4: Make the sauce
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and maple syrup. Pour the sauce over the stir-fried vegetables and toss to coat.

Step 5: Combine the tofu and vegetables
Return the cooked tofu to the skillet and toss to combine with the vegetables. Season with salt and pepper to taste.

Step 6: Cook the cauliflower rice
In a separate skillet, heat vegetable oil over medium heat. Add the grated cauliflower and sauté for 5-7 minutes until tender.
