Lemon Herb Roasted Chicken with Rosemary Potatoes and Garlic Green Beans

Step 1: Prep the Chicken
Preheat oven to 400°F (200°C). Rinse the chicken and pat it dry with paper towels.

Step 2: Season the Chicken
In a small bowl, combine minced shallot, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Rub the herb mixture all over the chicken, including under the skin of the breast. Place lemon halves inside the cavity of the chicken.

Step 3: Roast the Chicken
Place the seasoned chicken in a roasting pan. Dot the chicken with butter. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

Step 4: Prepare the Potatoes
While the chicken is roasting, toss the quartered potatoes with olive oil, remaining rosemary, remaining thyme, salt, and pepper in a large bowl.

Step 5: Roast the Potatoes
After the chicken has been roasting for 30 minutes, add the potatoes to the roasting pan around the chicken.

Step 6: Cook the Green Beans
While the chicken and potatoes are roasting, steam or boil the green beans until tender-crisp. Drain well.

In a skillet, heat remaining minced garlic in a tablespoon of olive oil over medium heat. Add the cooked green beans and toss to coat. Season with salt and pepper to taste.
