Lemon Garlic Chicken with Steamed Broccoli and Wild Rice
Tips for Experienced Cooks
Use an instant-read thermometer to ensure your chicken is perfectly cooked (165°F internal temperature). For added complexity, you could marinate the chicken overnight in the lemon juice, garlic, and some olive oil for deeper flavor. Once the chicken is fully cooked, you could finish it under a broiler for a minute or two to get a nice, crispy top.
Step 1: Prepare the Chicken
In a large bowl, combine the chicken breasts, melted butter, lemon juice, and minced garlic. Toss to coat the chicken.
- 4 pounds boneless, skinless chicken breasts
- 4 ounces butter (melted)
- Juice from 4 lemons
- 4 garlic cloves (minced)
Step 2: Cook the Chicken
Preheat the oven to 400°F. Place the chicken in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
Step 3: Steam the Broccoli
While the chicken is cooking, bring a pot of water to a boil. Add the broccoli florets and steam for 5-7 minutes, or until tender.
- 1 head broccoli (cut into florets)
Step 4: Cook the Wild Rice
In a medium saucepan, cook the wild rice according to package instructions.

Step 5: Season the Chicken
After the chicken is cooked, sprinkle the dried oregano and black pepper over the top.
