Tips for Experienced Cooks

To elevate the flavors, consider toasting the quinoa in a dry pan until it's lightly browned before adding the chicken broth. This will add a nutty flavor to the quinoa. When marinating the chicken, try adding a squeeze of lemon juice for added zest. Experiment with different types of za'atar spice blends for variety. For the roasted vegetables, try adding a splash of balsamic vinegar in the last 5 minutes of roasting for a tangy glaze.

Step 1: Marinate the Chicken

In a bowl, combine the chicken breasts, za'atar spice, and olive oil. Let marinate for at least 30 minutes.

  • 4 chicken breasts
  • 2 tablespoons za'atar spice
  • 2 tablespoons olive oil

Step 2: Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until cooked through.

Step 3: Roast the Vegetables

Preheat the oven to 425°F (220°C). Place the sliced bell peppers, red onion, and cherry tomatoes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 20-25 minutes, or until caramelized and tender.

  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Step 4: Cook the Quinoa

In a medium saucepan, bring the chicken broth (or water) to a boil. Add the quinoa, reduce heat to a simmer, cover, and cook for 15 minutes, or until the quinoa is cooked and fluffy.

  • 1 cup quinoa
  • 2 cups chicken broth (or water)

Step 5: Serve

To serve, divide the quinoa among plates, top with grilled za'atar chicken, and roasted vegetables. Garnish with fresh parsley and enjoy!
