Grilled Za'atar Chicken with Roasted Vegetables and Quinoa
Tips for Experienced Cooks
To elevate the flavors, consider toasting the quinoa in a dry pan until it's lightly browned before adding the chicken broth. This will add a nutty flavor to the quinoa. When marinating the chicken, try adding a squeeze of lemon juice for added zest. Experiment with different types of za'atar spice blends for variety. For the roasted vegetables, try adding a splash of balsamic vinegar in the last 5 minutes of roasting for a tangy glaze.
Step 1: Marinate the Chicken
In a bowl, combine the chicken breasts, za'atar spice, and olive oil. Let marinate for at least 30 minutes.

Step 2: Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until cooked through.
