Cajun Spiced Chicken with Bell Peppers and Onions over Brown Rice
Tips for Experienced Cooks
Try making your own Cajun seasoning for a personal touch and even more flavor customization. Experiment with smoking the chicken for an added depth of flavor. Consider using different types of rice, like wild rice or a rice blend, for a unique texture and taste.
Step 1: Cook the Rice
Cook the brown rice according to package directions, using chicken broth instead of water for added flavor.
- 1 cup brown rice
- 2 cups chicken broth
Step 2: Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, toss the chicken with Cajun seasoning, garlic powder, paprika, and black pepper.
- 1.5 pounds chicken breasts (boneless, skinless)
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
Step 3: Sauté Vegetables
Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced bell peppers and onions and sauté until tender-crisp.
- 1 tablespoon olive oil
- 2 medium bell peppers (various colors, sliced)
- 1 medium onion (sliced)
Step 4: Cook the Chicken
Add the seasoned chicken to the skillet with the bell peppers and onions. Cook until the chicken is cooked through and lightly browned.
- Seasoned chicken from Step 2
- Sautéed vegetables from Step 3
Step 5: Serve
Serve the Cajun spiced chicken and vegetables over the cooked brown rice. Garnish with chopped green onions, if desired.
