Brazilian Bife Acebolado with Farofa, Black Beans and Roasted Vegetables

Step 1: Prepare the beef
In a large bowl, toss the sliced beef sirloin with the minced garlic, salt, and black pepper until evenly coated.

Step 2: Sauté the onions
In a large skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until softened and caramelized, about 15 minutes.

Step 3: Cook the beef
Increase the heat to medium-high. Add the seasoned beef to the skillet and cook, stirring frequently, until the beef is browned and cooked through, about 5-7 minutes.

In a small skillet over medium heat, toast the cassava flour, stirring constantly, until fragrant and lightly browned, about 3-5 minutes.

Step 5: Prepare the roasted vegetables
Preheat the oven to 400°F. Toss the green beans, carrots, and broccoli florets with a drizzle of olive oil and season with salt and pepper. Arrange in a single layer on a baking sheet. Roast for 20-25 minutes, until vegetables are tender and lightly browned.

Step 6: Warm the black beans
In a small saucepan, heat the canned black beans with a splash of water over medium heat, stirring occasionally, until heated through.

Step 7: Finish the bife acebolado
Stir the fresh parsley and cilantro into the beef and onion mixture. Taste and adjust seasoning with salt and pepper as needed.

Step 8: Serve
