Beef Rogan Josh with Saffron Rice and Garlic Spinach

Step 1: Prepare the beef
In a bowl, combine the beef stew meat with the yogurt, 2 cloves minced garlic, and 1 teaspoon each of cumin, coriander, paprika, and garam masala. Stir to coat the beef evenly. Cover and refrigerate for at least 30 minutes.

Step 2: Cook the rice
Bring 3 cups of water to a boil in a medium saucepan. Add the basmati rice, cover, reduce heat to low, and simmer for 15-20 minutes until rice is tender.

Step 3: Make the Rogan Josh
In a large skillet or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Add the diced onion and sauté for 5 minutes until translucent. Add the grated ginger and remaining 2 cloves minced garlic and cook for 1 minute more.

Add the marinated beef and any yogurt marinade to the pan. Cook for 5-7 minutes, stirring occasionally, until the beef is browned.

Stir in the tomato paste, diced tomatoes, 1/2 teaspoon cayenne, and the remaining 1 teaspoon each of cumin, coriander, paprika, and garam masala. Bring to a simmer, then reduce heat to low, cover and cook for 45 minutes, stirring occasionally, until the beef is very tender.

Step 4: Make the Garlic Spinach
In a skillet, heat 1 tablespoon of oil over medium heat. Add the remaining 2 cloves minced garlic and cook for 1 minute until fragrant. Add the baby spinach and cook for 2-3 minutes, stirring frequently, until the spinach is wilted.

Step 5: Finish the Saffron Rice
Fluff the cooked basmati rice with a fork. Crumble the saffron threads over the rice and gently stir to combine.
