BBQ Chicken Breast with Mango Salsa, Brown Rice Pilaf, and Steamed Broccoli
Tips for Experienced Cooks
Consider using bone-in, skin-on chicken breasts for juicier meat; you can remove the bones and skin after cooking if desired. Add minced jalapeño to the mango salsa for an extra kick. Infuse the water for the brown rice with a bouillon cube or chicken stock for richer flavor. Allow the chicken to rest for a few minutes after cooking to redistribute the juices. For an elevated presentation, plate the chicken on a bed of rice, top with mango salsa, and arrange the steamed broccoli around it.
Step 1: Prepare the Chicken
In a large bowl, pat the chicken breasts dry and season with chili powder, cumin, salt, and black pepper. Cover and refrigerate until ready to cook.
- 4 pounds chicken breasts
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Step 2: Make the Mango Salsa
In a medium bowl, combine the diced mangos, diced red onion, lime juice, chopped cilantro, and a pinch of salt. Stir to mix well.
- 2 mangoes (diced)
- 1 red onion (diced)
- Juice of 2 limes
- 1 bunch cilantro (chopped)
- 0.25 teaspoon salt
Step 3: Cook the Brown Rice Pilaf
In a medium saucepan, bring 4 cups of water to a boil. Add the brown rice, cover, and reduce heat to low. Simmer for 25-30 minutes until rice is tender.
- 2 cups brown rice
- 4 cups water
Step 4: Steam the Broccoli
In a steamer basket, steam the broccoli florets for 5-7 minutes until tender.
- 1 head broccoli (florets)
Step 5: Cook the BBQ Chicken
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes per side until cooked through. Drizzle with honey during the last 2 minutes of cooking.
