Grilled Chicken Fajitas with Avocado Salsa
Tips for Experienced Cooks
To elevate the flavors, consider marinating the chicken for up to 4 hours in the fridge. The longer marination period allows the flavors to penetrate deeper into the chicken. Additionally, to add a smoky char flavor, you can char the vegetables briefly on the grill before sautéing them. Finish the tacos with a sprinkle of cotija cheese and a drizzle of crema or sour cream mixed with lime juice for a creamy texture and a tangy twist.
Step 1: Prepare the marinade
In a large bowl, whisk together the olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and black pepper.
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 3 cloves garlic (minced)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Step 2: Marinate the chicken
Add the chicken breasts to the marinade and toss to coat. Let marinate for at least 15 minutes.
- 4 boneless, skinless chicken breasts
Step 3: Grill the chicken
Preheat a grill or grill pan to medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes.
