General Tso's Chicken with Steamed Broccoli and Garlic Fried Rice

Double fry the chicken for extra crispiness. After the initial frying, remove the chicken and let it rest for a few minutes, then fry it again quickly on high heat. Step 1: Make the General Tso's Chicken
In a medium bowl, combine the chicken, soy sauce, rice vinegar, brown sugar, and cornstarch. Toss to coat the chicken.

Step 2: Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken mixture and cook, stirring occasionally, until the chicken is cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside.

Step 3: Cook the Broccoli
In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat. Add the broccoli florets and a splash of chicken broth. Cover and steam the broccoli until tender, about 5-7 minutes.

Step 4: Make the Garlic Fried Rice
In a separate skillet or wok, heat the 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and diced onion. Cook for 2-3 minutes until fragrant. Add the rice and stir to combine. Cook for 5-7 minutes, stirring occasionally, until the rice is heated through.

Step 5: Finish the Dish
Return the cooked chicken to the skillet with the broccoli. Add the ginger, red pepper flakes, and white pepper. Stir to combine and cook for an additional 2-3 minutes until heated through.
