Spiced Chickpea and Spinach Curry with Garlic Naan

Step 1: Sauté the onions and aromatics
Heat vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened. Add the minced garlic, grated ginger, garam masala, cumin, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.

Step 2: Cook the tomatoes

Add the chickpeas, coconut milk, and salt. Simmer for 15-20 minutes until the chickpeas are tender and the sauce has thickened.

Step 4: Wilt the spinach
Stir in the chopped spinach and cook until wilted.
